Chicken, Mango & Chilli Salad
Method
Boil the chicken breasts until cooked through.
While chicken is cooking, slice the chillies, cut mangos into small square pieces (keep juice), slice spring onions and cucumber and mix all ingredients into the salad – adding juice of mango and lime.
When chicken is cooked, cut into strips and mix into salad. Add oil and serve.

- 4 skinless chicken breasts
- 2 chillies
- 2 ripe mangos
- 1 lime
- 1 large bag of mixed salad
- 4 spring onions
- 1 cucumber
