To make the batter whisk the eggs and flour together in a bowl and then add the milk, salt and pepper and a sprinkle of dried thyme. Ideally make the batter the night before and let it rest in the fridge - but don't worry if this isn't possible
Preheat the oven to 220 degrees C/425 degrees F/Gas Mark 7. Pour some olive oil into a dish so that the base of the dish is covered and place into the oven to warm.
Once the oil has warmed add the sausages to the dish and cook in the oven for 10 minutes
Add the batter mixture to the hot dish and return to the oven for 25-30 minutes until risen and golden brown (don't open the door for the first 20 minutes, otherwise the batter may not rise properly). Enjoy!
