Garlic Spinach Chicken
Method
Preheat oven to 190
Mix parsley and butter together in a bowl
Slice chicken breasts in half (length ways) – NOT all the way through
Put one teaspoon of garlic butter mix inside each chicken breast, then close and season with salt and pepper
Lay bed of spinach on baking dish and pour chicken stock over spinach
Place chicken breasts on top of spinach, covering each one with sliced onions and tomatoes
Cover baking dish with foil and cook for 30 minutes

- 2 skinless chicken breasts
- 1 handful parsley, finely chopped
- 2 teaspoons garlic butter
- 85g spinach
- 50 ml chicken stock
- 1/2 onion, finely sliced
- 8 baby tomatoes, on the vine
- Salt and pepper
