Low Fat Chicken Waldorf Salad

Low Fat Chicken Waldorf Salad Recipe
Ingredients:
  • 125ml/4fl oz fat free yogurt
  • 2 tbsp lemon juice
  • 375g/12oz diced cooked chicken
  • 3 celery sticks, sliced thinly
  • 75g/3oz chopped walnuts
  • 50g/2oz raisins
  • 2 red apples
  • Salt & pepper
  • Crispy lettuce leaves to serve

Method:
  1. Put the yogurt in a large bowl, add 2 tablespoons of lemon juice and stir well to mix
  2. Add the chicken, celery, walnuts and raisins to the yogurt and stir well
  3. Core and dice the apples then add immediately to the salad and stir well to coat. Add salt and pepper to taste
  4. Line a salad bowl with lettuce leaves and pile the salad into the centre. Serve at room temperature.
